Of course, it tastes fantastic. Brimming with ripe peach, pear and citrus, leading to toasty biscuity notes carried along a fine seam of creamy bubbles.
Sounds a lot like Champagne. And there’s a reason for that!
It just happens to be made in exactly the same painstaking, expensive way as Champagne. But costs a fraction as much.
The ‘Traditional Method’ involves putting the wine through a long secondary fermentation in bottle, and ageing the wine for months on its lees – the yeast left over from the first fermentation.
This creates tiny, perfectly formed bubbles and delicious bready notes ...
JUST what you’d expect from fine Champagne.
In fact the luxury sparklings of Limoux, the region where Roche Lacour is made, may even outdate those of Champagne.
It’s said the Benedictine monks of Saint Hilaire mastered sparkling wine methods in 1531. So Limoux had made sparkling wine long before Dom Pérignon was in short trousers.
To this day, they still make fine fizz in this little-known corner of southern France ... wines that rival Champagne for value AND quality.

It’s possible the first bubblies were made by accident! Wines made over winter would have had fermentation stopped by the cold weather ... before the yeast woke up again in spring.
