This International Women’s Day, we’re celebrating Malaysian culinary expert and founder of London-based Sambal Shiok Laksa Bar, Mandy Yin. In 2013, after almost a decade of practicing corporate law, Mandy burnt out. After taking a few months off to reassess what was important to her, she found her way to food.

Trading courtrooms for food markets, Mandy opened Sambal Shiok as a humble street food stall. By 2015, Sambal Shiok’s concept was evolving into a fully fledged laksa bar from pub kitchen pop-ups to a critically acclaimed, award-winning restaurant.
